Chicken Gnocchi Soup Recipe


I’m telling you, there is something in the air when fall arrives that makes me want to stay in the kitchen and cook all day long! Now that the days are getting chillier, there is nothing like making a warm soup and snuggling on the couch while enjoying your favorite fall movie. One of my fall dinner staples this season has been this Chicken Gnocchi Soup, and it is actually one of Will’s favorite soups that I make. It’s perfect for fall parties, a night at home, or even football Sundays!


Ingredients

Olive oil

Salt and pepper

2 chicken breasts

3 carrots diced

3 celery sticks diced

1/2 yellow onion diced

1 tbs minced garlic (you can use fresh garlic)

4 cups chicken broth

2 cups milk

2 cups heavy whipping cream

Italian seasoning

Onion powder

Garlic salt

1.5 bags of fresh spinach

18oz of potato gnocchi 


Steps

Heat up olive oil in a pot, then add chicken breasts over medium-high heat. Season with salt and pepper. Heat until fully cooked through. Remove chicken and let rest.

Dice up onion, celery, and carrots.

In the same pot you used for your chicken, add additional olive oil and let it heat up. Once your oil olive is hot, add in onion and cook down for 3-4 minutes. Add in celery, carrots, salt and pepper and cook for around 8 more minutes. Afterward, add in minced garlic and mix.

In the same pot, add in chicken broth, milk, and heavy whipping cream. Stir until combined.

Add in Italian seasoning, onion powder, and garlic salt (to taste).

After your chicken has rested, shred it into bite sized chunks and add it to your pot. Stir until the chicken is evenly mixed in.

Once everything is combined, bring your soup to a boil and let it cook for 5 minutes.

Lower your heat and add in as much or little spinach as you would like (I like to add about 1.5 bags) and stir.

Add in potato gnocchi and bring the soup back to a boil for another 5 minutes.

Remove the soup from the heat, and it is ready to serve! Personally I bring the soup down to a simmer and let it cook for another 15 minutes to allow all the seasonings and food to come together and blend perfectly!

Pro Tip

If you’re not a leftover person, this soup will change your mind! I’ve found it tastes better after the ingredients have had time to marinate as they sit in the fridge. So, don’t be afraid to make this the night before serving as it will be extra delicious once warmed the next day!
